Blondies (Butterscotch Brownies)

  • 3 cups brown sugar
  • 3 sticks butter, melted
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 3 cups butterscotch chips
  • sea salt, optional
  1. Spray a half sheet pan with cooking spray, then line the bottom with parchment paper. Spray the paper with more cooking spray. Preheat oven to 325 degrees.
  2. Combine brown sugar and melted butter and beat with an electric mixer until fairly smooth. Add eggs and vanilla and beat until incorporated. Slowly mix in flour until smooth, then stir in chips.
  3. Pour into prepared pan and smooth into corners. If desired, sprinkle liberally with sea salt. Bake for 30 minutes. Remove from oven and allow to cool fully in the pan before slicing in 48 2-inch blondies.
If you want to make a smaller batch, cut all ingredients into ⅓ and bake in an 8 x 8 inch pan for 30 minutes.
