Lamb Ragu and Pasta

Ingredients
  • 1 tablespoon extra virgin olive oil
  • 1 large onion, diced
  • 1 pound shredded cooked lamb shoulder, fat drained
  • 1 pint high quality tomato sauce (I used homemade)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • salt and pepper, to taste
  • 8 ounces pasta of your choice
Instructions
  1. Heat oil in a medium saucepan and add onions; cook over medium high heat until soft, about 5 minutes. Add garlic and saute another minute or two, then add lamb, tomato sauce, basil and oregano. Stir together, bring to a simmer, cover and let simmer for about 30 minutes.
  2. While ragu is simmering, cook pasta and drain. Season ragu with salt and pepper to taste and serve over the pasta with freshly grated Parmigiano Reggiano cheese.
