Combine the buttermilk with the sugar and eggs in the top of a double boiler and whisk together. Cook, stirring continuously, until the mixture thickens, about 5 to 10 minutes.
Remove from the heat and pour into a covered container. Stir in the cream and the extract and refrigerate until completely cool.
Process in an ice cream machine according to manufacturer's directions, and then spoon into a covered container. Gently stir in the chocolate, then cover and refrigerate until solid.
