  1. Season the shanks with the spice mixture and vacuum seal in a large bag. Preheat the sous vide machine to 140 degrees for medium and cook the lamb shanks for a minimum of 24 hours in the sous vide machine. Cut meat from the shanks to use in salads, wraps or tacos.
