Scrub the potato and then slice it into French fry pieces about ¼-inch in width. Spread the fries on a rimmed baking sheet. Pour the oil over the top, then sprinkle liberally with salt, pepper, and garlic powder. Sprinkle the cheese over the top, then toss everything together so that all of the fries are nicely coated. Bake at 375 degrees until nicely browned, about 30 minutes. Do NOT move the fries while they bake - the bottom will develop into a lovely caramelized piece of potato that you'l find irresistible.
