4 ounces shredded pork rib meat, fat and gristle discarded
2 cups leftover cooked rice
½ cup frozen peas
2 scallions, thinly sliced
Soy sauce, for serving.
Instructions
Heat the oil in a skillet or wok and quickly cook the eggs - transfer to a plate. Add the pork meat and stir until heated through. Add the rice and peas and cook until warmed. Remove from the heat, stir in the cooked egg and scallions, and serve with soy sauce.
