Ingredients
  • 8 ounces orzo pasta, cooked al dente, rinsed under cold water, and drained
  • 4 ounces feta cheese crumbles
  • 2 scallions, sliced
  • ¼ to ½ cup toasted pine nuts (or almonds)
  • 1 tablespoon minced fresh mint
  • ¼ cup lemon juice
  • ¼ cup extra virgin olive oil
  • Salt and pepper
Instructions
  1. Toss the cooked orzo with the feta, scallions, pine nuts, mint, lemon juice, and olive oil. Season with salt and pepper to taste
