Combine the water and sugar and heat until the sugar dissolves, just barely simmering. Add lemon zest, ginger and mint along with the vegetables. Cook for a minute, then remove from heat, add the fruit, and refrigerate until ready to serve.
To serve, spoon fruit and vegetables with a bit of the juice into a bowl and top with a scoop of gelato.
