Green Chile Mac and Cheese with Chicken and Broccoli

Ingredients
  • ½ pound short pasta
  • 2 cups broccoli florets
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup whole milk
  • 8 ounces cream cheese, softened
  • 8 ounces sharp cheddar cheese, grated
  • 1 cup diced green chiles
  • 2 cups diced cooked chicken
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ cup bread crumbs
  • ¼ extra virgin olive oil
Instructions
  1. Cook the pasta according the package directions until al dente. Scoop the pasta out of the cooking water and set aside, then blanche the broccoli in the pasta water for 2 minutes; drain.
  2. Melt the butter in a saucepan and whisk in the flour, then cook for a couple of minutes to remove the raw flour taste. Slowly whisk in the milk, stirring constantly, until smooth and thickened. Stir in the cream cheese and cheddar until fully melted.
  3. Add the chiles, chicken, broccoli, salt, and pepper and mix well. Spoon into a greased 9 x 12 glass baking dish and sprinkle the bread crumbs over the top. Drizzle the olive oil over the bread crumbs.
  4. Bake at 375 degrees until bubbly and the top is browned and crispy, about 30 minutes.
