2-3 ounces pinhead oats (also called Irish or steel cut) (1/3 - ½ cup)
2 ounces wheat bran (1 cup)
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons sugar
2 eggs, beaten
3 cups buttermilk
4 tablespoons Bagel Spice blend (original or sea salt)
Instructions
Combine dry ingredients in a large bowl and mix well. Stir in 3 tablespoons of the Bagel Spice blend mix. Combine egg and buttermilk, then pour into bowl and mix to form a soft batter similar in texture to zucchini bread. Pour batter into a greased loaf pan and sprinkle remaining Bagel Spice on top of loaf; bake at 375 degrees for about 50 minutes. Cool on a wire rack before slicing. Best when toasted and buttered.
