As I was icing my knee this past week, feeling completely bored, and wondering if I could possibly watch another single show on HGTV while working through my physical therapy after my knee surgery when it came to me: Chocolate Chocolate Chip Cookies.And although, in my gimpy and somewhat tired condition, it took me all afternoon to get it together – pull out the ingredients, develop the recipe, make the cookie dough, chill it, and bake – I was rewarded with some pretty great cookies by the time evening rolled around. Can’t you just imagine having one of this with a big ol’ bowl of vanilla ice cream?
- 2 sticks salted butter
- 1 cup brown sugar
- ½ cup white sugar
- ½ cup cocoa powder
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup whole wheat flour
- 1 cup all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1-2 cups chocolate chips
- Cream butter and sugars together until smooth. Add cocoa powder and eggs and mix on low until combined. Add vanilla extract, flours, baking soda, and salt and mix on low until smooth. Mix in chocolate chips.
- Scrape dough down from the sides and cover with plastic wrap directly on top of the dough. Refrigerate until chilled, then scoop onto baking sheets lined with parchment paper or silicone baking mats. Bake at 375 degreees for 13-15 minutes. Let cook on pan before removing.
