We all have those foods that we just don’t love that much, and for me cauliflower is one of those. But fortunately, much like tofu, it takes on the flavor of anything you combine it with. And who doesn’t love the flavor of garlic and herb Boursin cheese? I served this side dish with fried chicken, and it paired nicely.

Creamed Cauliflower with Boursin and Spring Onions

Ingredients
  • 1 large head of cauliflower, chopped into florets (about 5 cups)
  • 1 package of Herb and Garlic Boursin cheese
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 4 spring onions, chopped, for garnish
Instructions
  1. Boil the cauliflower until tender, then drain and add to the bowl of a food processor along with the cheese, salt and pepper. Process until creamy. Pour into a serving dish and garnish with spring onions.
