Boursin and Chive Stuffed Sweet Potatoes

Sweet potatoes – so nutritious, yet so often ignored until Thanksgiving! When I got a diagnosis of low potassium from a recent blood test, I set out to eat foods that are high in potassium in the hopes that I can avoid yet another drug. Enter sweet potatoes – smack in the middle of summer!
I actually like my sweet potatoes a little less sweet and a little more savory, and the simple addition of Boursin herb cheese along with some chives was perfect for my taste.
Boursin and Chive Stuffed Sweet Potatoes

Ingredients
- 2 medium sweet potatoes
- ¼ cup softened Boursin cheese
- 2 tablespoons minced chives
- 1-2 tablespoons cream
- Pepper, to taste
Instructions
- Clean the potatoes then bake or microwave until soft; let cool. Slice the top off of each potato and carefully scoop out the flesh into a bowl, taking care not to rip the skin.
- Mix the potato flesh with the Boursin and chives then add a bit of cream to make the mixture silky. Season to taste with pepper.
- Spoon the mixture back into the potato skins and refrigerate until you are ready to eat. Microwave until warmed through, about 2 minutes.
Notes
You don't need to add salt to these potatoes because the cheese is already salty.
