Cajun Pasta

Sometimes I get a craving that can’t be ignored, and that’s how this dish originated. It’s quite simple to throw together, yet it’s packed with flavor. If you don’t have andouille sausage, you could use another meat like chicken, or even bratwurst cooked and sliced. Don’t be scared by the cayenne in the ingredients – it’s a small amount and can be upped if you want more heat or even eliminated if you can’t take any heat.

Ingredients
  • 2 tablespoons extra virgin olive oil
  • 1 small onion, diced
  • 1 sweet pepper (any color), diced
  • 6-8 ounces mushrooms, sliced
  • 12 ounces cooked andouille sausage, sliced
  • ½ teaspoon cayenne pepper
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon salt
  • ¼ cup flour
  • 1 14-ounce can tomatoes, crushed
  • ½ to 1 cup milk
  • Handful of chopped parsley
  • 8 ounces short pasta, cooked and drained
Instructions
  1. Heat the oil in a large skillet over medium high heat, and the onion, pepper and mushrooms. Cook until slightly softened, then add the sausage and spices and cook until the sausage is heated through.
  2. Sprinkle the flour over top and stir until it's absorbed, then add the tomatoes and milk, and cook until the sauce thickens. Stir in the parsley and the cooked pasta, and simmer for a minute, then serve.
