Apple Harvest Salad with Olomomo Spiced Pecans and Noosa Honey Yoghurt

As a food blogger, I get asked frequently to try out new products and to blog about them. I rarely do that – simply because it’s so time-consuming to create a quality blog post with a recipe and photos. But when I am contacted by a company whose products or business philosophy really speak to me, especially when it’s a local Colorado company trying to establish themselves, then I’m happy to help.Meet Olomomo, a nut company out of Boulder whose website proclaims: “About OLOMOMO – Where you get your ingredients. And sometimes, I just want to make something simple like this. Roughly chop those uniquely flavored pecans……and toss them with some diced apples and some Noosa honey yogurt and you have the most interesting – yet simple – side dish for brunch. Noosa is another great Colorado company – the yoghurt is made right on the farm where the cows produce the hormone free milk and they use local Colorado honey and seasonal fruit purees to make a delicious full fat yoghurt. - 6 crisp apples (a variety of honey crisp, gala, and granny smith is nice), diced
- 1 8-ounce container of Noosa honey yoghurt
- 1 3.25-ounce bag Olomomo Maple Garam Masala Roasted Pecans, roughly chopped
- 1 lemon, juiced
- Combine the apples with the yoghurt, pecans, and lemon juice and stir gently until everything is evenly coated. Refrigerate until ready to serve.
