Chipotle Mayo

Chipotle mayo is delicately flavored with just a tiny bit of heat, and it’s great on salads, burgers, sandwiches, tacos, fish, chicken and more. Sure, you can probably find some pre-made in a grocery store – but it’s likely to be full of additives and preservatives. This literally takes 2 minutes to make, so skip the processed aisle and opt for a fresh version.

Serves: 1½ cups
Ingredients
- 12 ounces mayonnaise
- 1 lime, juiced
- 1 tablespoon chipotle puree (see notes)
- ½ teaspoon ground cumin
- ½ teaspoon garlic powder
- ½ teaspoon salt
Instructions
- Combine all ingredients in a blender and blend until smooth. Refrigerate until ready to use.
Notes
To make chipotle paste, puree a can of chipotle peppers in adobo sauce in the blender with just enough water to make the mixture come together into a thick paste like ketchup. Spoon into a fine mesh strainer and press the puree threw the strainer into a bowl; discard seeds and other solids. Freeze puree in ice cube trays until needed.
