Soy-Garlic Broiled Chicken

I rarely use the broiler, often worried I’m going to burn or dry out food before it’s cooked through. But this chicken turned out great. The secret is to place the rack lower down in the oven and turn the chicken every 5-10 minutes until it’s cooked through. This recipe hints of Asian flavors and works well with the Soba Noodle salad I posted last week.

Ingredients
  • ½ cup butter, melted
  • 2 tablespoons minced garlic
  • 2 tablespoons soy sauce
  • 1 tablespoon dried parsley
  • 1 teaspoon black pepper
  • 1 chicken, broken down into parts
Instructions
  1. Stir together the butter, garlic, soy, parsley and pepper. Place the chicken skin side up on a rack over a baking sheet or on the broiler pan of your oven. Baste the chicken with about ⅓ of the marinade, then place under the broiler set to high with the rack in the middle of the oven. Cook for 10 minutes, then turn the chicken and baste on the other side. Continue cooking the chicken for 5 minutes per side, turning, and basting, until the chicken is cooked through, about 25 minutes total.
