Sweet Potato Fries

Are you like me and you never seem to think of sweet potatoes until Thanksgiving draws near? Well, they happen to be packed with nutrients and are available year round at the grocery store, so here’s an easy way to cook them up for dinner any night of the year.

Sweet Potato Fries
Serves 4

Indulge your desire for fries with this heart healthy version made from sweet potatoes which are high in vitamins and antioxidants.

1 pound sweet potatoes
3 tablespoons extra virgin olive oil
1/2 teaspoon paprika
1 tablespoon fresh rosemary leaves, minced
1 teaspoon salt
1/2 teaspoon cracked black pepper

Preheat oven to 400 degrees F. Clean sweet potatoes and peel if desired. Cut into large wedges like steak fries. Combine potatoes with oil and seasonings in a large bowl, tossing to coat and distribute seasonings evenly.

Spread potatoes in a single layer on a baking sheet, and bake until crispy and cooked, about 30-45 minutes. Check fries every 5-10 minutes, and using a thin metal spatula, gently lift fries and turn them so that they crisp up on all sides, taking care not to rip off any crispy coating when you turn them.

Sprinkle with some extra sea salt as soon as the fries come out of the oven and serve immediately.
