Guess what I did this past weekend? You got it. Right before the weather finally turned to winter in Colorado I harvested my garden. I have lived here for nearly 30 years and I don’t ever remember having a garden full of greens right into December. The harvest included kale, which I wilted down to freeze for later use.
Arugula, which I can either eat in a salad or toss into pasta dishes to cook.
And another round of spinach. You know spinach doesn’t go a long way when you cook it…
…but boy was that the best lunch ever. Here’s to the longest growing season I’ve ever witnessed in Colorado – thank you Mother Nature!
