Cooking schools in foreign countries never cease to excite me. No matter how much you know about cooking, you learn new things and learn new recipes. For instance, what happens when you take a gorgeous facility like Kochschule Eppelheim in Heidelberg….
..and add one very nice (and nice looking!) young chef.Throw in a lovely seasonal and local menu.Add onions……fresh trout……chives from the garden……some strong fish tweezers……a whole beef sirloin with rosemary and chives from the garden……carrots and garlic……farm fresh eggs……potato dumplings……freshly grated nutmeg……fennel seed……caramelized onions……and newly harvested apples.The result is one incredible feast of German food.Smoked trout with whipped potatoes and garlic aioliCreamy beet soup with potato dumplingsRoast beef with caramelized onions, spaetzle, and vegetablesApple fritters with ice cream and berries. What a great class!

I loved, loved, loved this school! That beef tenderloin and the trout appetizer will be attempted in my kitchen soon. And by the way, who ever made those horseradish dumplings sure did a nice job… (wink)
