College Cooking

My daughter Jenny was home from school this weekend long enough to do her laundry and take a nap on the couch. Before she left she shared with me one of her new favorite college recipes to make, compliments of Mrs. Decker of Ohio.

Hot Dog Casserole
Serves 4

4 cups cooked mashed potatoes (they used the box instant variety)
1 red pepper, diced
1/2 yellow onion, diced
3/4 jar marinara sauce
6 hot dogs

Saute peppers and onions in large skillet until soft. Combine marinara and vegetables in a medium saucepan and let simmer. Meanwhile, slice hot dogs diagonally in half inch pieces [editor’s note: don’t you love the food artistry since they slice them diagonally?!] and cook in skillet until lightly browned. Add to sauce and stir together.

To serve, ladle sauce and hot dogs over a generous scoop of mashed potatoes. Enjoy!
