Kofta Lamb Kebabs with Lemon Yogurt Sauce
I don’t usually cook a great deal of Middle Eastern dishes, but when Niman Ranch challenged me to think outside of the recipe box for ways to use their ground lamb, this seemed like a perfect recipe to share. Kofta are sometimes made with meat, sometimes vegetarian, but always a beloved savory dish in these cultures.These kofta lamb kebabs come together quickly, making this the perfect dinner for a busy weeknight. Either wrap the kofta in Naan bread or stuff them in a pita. Drizzle with the flavorful and refreshing yogurt sauce and serve with a cool cucumber salad.
