Roasted Garlic Butter Spread

On boy, I’ve done it now! This is delicious. This is easy. And unfortunately, this is addictive.That’s the only explanation I can give for why I had two pieces of bread with this butter on it for lunch (with leftover Pasta e Fagioli) and then decided I needed a third piece of buttered bread for a mid-afternoon snack.Use my technique for easy garlic roasting on the stove, then whip up some butter. A nice slather of this on some hearty bread is the perfect accompaniment for so many things: chili, a bowl of soup, Spaghetti Bolognese, lasagna, paella – the list seems endless. I warn you – make this when you’re serving a crowd so there’s not too much leftover or you’ll spend the next day sneaking it whenever you can!
Roasted Garlic Butter Spread
Yields about 1 cup1/2 cup roasted garlic cloves
1/2 cup salted butter, softenedMash the garlic with a fork, then mash together with the softened butter. Slather on nice crusty bread and enjoy.
