Simple Summer Side

Just days after the temps in Colorado plummeted to freezing and the state had our first major snowfall, the weather warmed back up into the high 80s, which always prompts me to make cold side dishes. I love the flexibility of this recipe – you can make the exact same thing with couscous, quinoa, or rice instead of the orzo. You can serve this hot, room temperature, or cold. And you can change out the mint for basil, parsley, or cilantro. So consider this a jumping off point.

Ingredients
- 8 ounces orzo pasta, cooked al dente, rinsed under cold water, and drained
- 4 ounces feta cheese crumbles
- 2 scallions, sliced
- ¼ to ½ cup toasted pine nuts (or almonds)
- 1 tablespoon minced fresh mint
- ¼ cup lemon juice
- ¼ cup extra virgin olive oil
- Salt and pepper
Instructions
- Toss the cooked orzo with the feta, scallions, pine nuts, mint, lemon juice, and olive oil. Season with salt and pepper to taste
