Edamame and Mango Relish

I’m doing a cooking dinner party event tonight and the theme is Asian. Thought I’d quickly share this recipe with you as it’s healthy (are you trying to eat more healthy food? – answer the survey on the Cooking with Michele website at the bottom of the home page!) and yummy and a nice change from the every day side dish. Use this as an accompaniment to fish or chicken or pork.

Edamame and Mango Relish
Serves 8-10

2 tablespoons canola oil
1 teaspoon sesame oil, hot variety
1 red pepper, julienned
1 cup red onion, thinly sliced
2 cloves garlic, minced
2 cups edamame beans (buy blanched frozen beans already removed from the pods)
2 mangoes, diced (buy frozen if you can’t find nice and ripe)
1 tablespoon soy sauce

Heat canola oil and sesame oil in a large skillet over medium high heat. Add pepper and onion and cook until slightly softened, about 5 minutes. Add garlic and cook for one more minute, then add remaining ingredients, cover, reduce heat to medium low and cook for 5 minutes. If desired, sprinkle with toasted sesame seeds before serving
