For an open house I like finger foods, and cheese is always popular. But to make it a bit more summery, I stirred in some homemade basil pesto into goat cheese – and boy, was that a hit. You can make this ahead of time and then let it come to room temperature so that it’s soft to spread. Serve it with crackers and some nice crostini, on a platter with some Italian meats, and you have a party in minutes.

Ingredients
  • ½ cup basil pesto
  • 1 pound softened goat cheese
  • Salt to taste
Instructions
  1. Stir the pesto into the softened goat cheese until it's well mixed. Season with salt to taste, and then refrigerate. Bring to room temperature before serving.
