Chili Roundup

As you read this, I’m setting sail somewhere in the British Virgin Islands. I dislike winter more and more each year, and am happy to be away from the snow and cold of Colorado. And yes, I do know how fortunate I am! To ease winter for those of you in the northern hemisphere, I figured a chili roundup might keep you toasty warm until I get back. Here are a few of my favorites, made from everything from pork to bison to chicken to vegetarian:
Chipotle Bison Chili with Black Beans and Lime Crema – the lime really makes this one
