Dates Stuffed with Almonds and Feta

Looking for a quick and easy appetizer? Something simple? Something perhaps with a bit of a Moroccan feel to it? That’s what I had in mind when I came up with this for a Moroccan themed wedding shower that I recently catered.I like Marcona almonds, although you can use regular almonds if you prefer. And goat cheese would work in place of the feta. Look for the largest dates you can find so that you can fit an almond and enough cheese inside. Enjoy!

Dates Stuffed with Almonds and Feta

Serves: 12

Ingredients
  • 24 large Medjool dates, pitted
  • 24 whole almonds
  • 24 small pieces (about ¼ – ½ inch square) feta cheese

Instructions
  1. Carefully slice open one side of the dates. Insert an almond and a piece of feta into each date, and press the dates closed around the filling.
